Mark draws on his extensive experience to create stunning food that works with local producers as much as possible and follows the seasonal patterns for both wild, foraged food and more traditional ingredients.
Chef Patron Mark Payne entered into the profession straight from school and attended Stratford on Avon Catering College. He knew early on that he wanted to make a career out of his passion and flair for cooking and gained invaluable experience in London including, Claridges, The Avenue and The Atlantic. 11 years later he supported a friend from The Ivy setting up his own village pub and restaurant in the role as Head Chef and assistant manager. Mark and his Fiance moved to Gloucestershire 5 years ago and following a successful period as Head Chef at Cowley Manor hotel, he has now moved to his first solo venture.
